Why are our ancestors so fickle regarding censuses

Lately I have found a lot of my ancestors have aged more or less than 10 years between censuses and have changed their mind about their birthplaces, ie my Margaret Packard was aged 72 in 1851 born in Iken, Suffolk, then aged 86 in 1861 born in Ufford, Suffolk. Sorry if I am moaning. Maybe on one census our ancestors had few too many brandys when the enumerator called.

...and then forgot what they had guessed 10 years previously lol
