adoption laws help!!!

Does anyone know the adoption laws for the mid 1800s. My great grandfather John Ashcroft was born 1846 at Blackrod. mothers name Jane Ashcroft, no father on birth certificate. On 1851 Census he is living at Aughton near Adlington Lancs, he is listed as John Ashcroft adopted son of Thomas Moss and his wife Lydia. Would there have been any legal procedure for the family to adopt John, and if so where do I go to obtain any information,
