And don't be afraid of making eclairs - it is only choux pastry after all, with a bit of cream and a chocolate topping.

In the days when I made, and even ate pastry, the formula was 1/2 fat to flour, eg 8oz Plain Flour, to 4oz of fat made up of 2oz Trex and 2oz of either block Echo or block Stork. However, as I can't eat it now, but OH likes it, and it is Meat and Potato Pie for tonight, I just buy the slabs of Saxby's ready made. First to amit it is not quite the same, but he doesn't mind. I just eat the filling, but no pastry.
Did notice the other week that amongst the flours at Morrisons, they had the Be-ro Cake book. Must have a look this week.

Used to use Trex, and Cookeen, but now have to use Flora, as OH has high cholesterol.
