Decided to have a roast but just looked in the fridge & have no meat juice

To cook in oil is the done the same way

Julie to cook in oil is the exact same way as in juices, just don't have the same taste.

YOu will have meat juices from the meat as you roast it.

I do mine in the same pan as the meat....you can start the meat off with a little oil if there isn't much fat on it...

Im doing Chicken & im not sure a fancy chicken flavored potatoes lol....also with the amount of potatoes i do i haven't a dish big enough

Yes Julie I think they are more crisp and not as slushy if done in oil...

Oooo Julie, next best thing to goose fat is chicken fat. LOL

I do season my chicken well though, with sea salt, black pepper and thyme...which is great with roasties too. But I know what you mean...

Julie ...it has been suggested (not by me ) that I have OCD....last christimas I would only have veg on the dinner that matched the colour of my tree and wrapping paper...pmsl

I always use oil to cook my roast vegetables, mainly as we both have cholestrol problems and oil is more healthy. If I am being really good I use the sparay oil, they do crisp up which is how we like them.

I have used Crisp and Dry for donkeys years to cook my roast potatoes.I par boil then give a good shake to scratch them up and they turn out brilliant lol.No-one seems to like goose fat here.
