By the looks of it you can use black bean sauce.

You can order them from here
The Asian Cookshop
www.theasiancookshop.co.uk

Chinese Fermented Salted Black Beans / Preserved Salted Chinese Black bean
250g

These Fermented salted black beans are small, black soybeans that have been preserved in salt. Also known as Salty Chinese black beans or salted black beans, they have a very strong, salty flavour.

They have a very pungent smell and used sparingly. Salted black beans are widely used in Chinese cooking. Always rinse the black beans well before using to remove the excess salt and soak for about half an hour or so in water before adding to a dish.

Store the beans away from light in a cool place

Fermented black beans are not the same thing as black bean sauce (which is a sauce produced from these), although you can substitute the sauce with a tiny touch of the beans.

Perfect for stirfries and Oriental cooking.

Ingredients: Black bean, water, salt, ginger

Our Price: £1.99

driving around all the Asian/ Eastern shops in the area looking for fermented black beans, can't find any. Does anyone know how they come ie tinned, jars, loose? I know what they are small black beans preserved in salt but thats all.
