can you find out about the different ways people used to bring up other peoples kids in the 1890's 1900

my great grandfather adopted 2 children there are on 1911 census as adopted, through genes reunited I found one was the daughter of his daughters husbands 1st wife who died, after they were married they ran away together & left the child with her parents, never found how the other one came to be adopted
I do have other children who parents have died who were brought up by other family members but were not adopted all late 1890,s 1900
