Toasting Marzipan

Keep an eye on it so the marzipan doesn't burn...as happened when making a Simnel cake once!

Thanks everyone,, I think i might have a practice first,,

I wondered how it got all glazed and shiney,,it seems its the egg yolk,!!!

Dont know if this will help. Found it on net. It makes a trellis of marzipan on top of ready made icing. You could skip the trellising bits and just use the method of toasting. Good luck.

Roll out the reserved marzipan to a rectangle about 9 x 6 inches (23 x 15 cm), then cut it into 12 long strips about ½ inch (1 cm) wide for the lattice topping. Assembling the lattice goes as follows: first lay half the strips across the cake, leaving about ¾ inch (2 cm) gap between each strip. Then begin to thread the rest of the strips, one at a time, under and over the first ones, going at right angles. Finally, use some scissors to snip the overhanging marzipan away and press firmly all round to make the edges as neat as possible.

Now pre-heat the grill, and when it's really hot (it will take at least 10 minutes to come up to full blast), brush the marzipan strips with the egg yolk and place the cake under the grill, about 4 inches (10 cm) from the heat. Give it about 30 seconds, watching it like a hawk, until it turns a toasted brown colour.

Claire , sorry but never heard of toasted marzipan on a cake. Normally you would glace your cake with Apricot Jam or Conserve, to make the marzipan stick to it. Perhaps if you googled, you would get a better idea.

I thought i might just marzipan my christmas cake this year, and not ice it,
Iv seen cakes with toasted marzipan on but dont know how to achieve this affect,
Visions of me setting fire to the grill are very vivid,,
Does anyone know how to do it?
