I guess you would use the same recipe as chicken soup ,except may be cook it longer and in pieces instead of whole. never made it my self ,turkey I mean but mum makes a yummy chicken broth if you want me to get the recipe from her.

I'll have a big bowl full, please Mary. I love all soups, at all times, but as I am still very cowded up from before Christmas, it would be very welcome, at this house.

Oh Frances, send me some warmth, please!

It's rainy, blowy and cold and overcast here and I hate it!!!!!

I could do with some nice soup Mary, please, I have to get some parsnips and make some chicken and parsnip soup tomorrow or this evening. Yummy!

Happy New Year, Mary.

Lol Mary.... mine was made a couple of days ago.... I altered it slightly this year, though.... added the stock from boiling the bones and skin etc, and sieved that, then all the left over veg that wasn't used for fry up.... with some onions, mushrooms and bits and pieces, like chilli, peppers, courgette etc, then zapped that with a blender...... then I added a few tins of beans... canneloni, borlotti and black eyed, a good dollop of apple sauce and two tins of chopped tomatoes, left it on low for 20 minutes then added the rest of the veg water which had been in the fridge from Christmas Day (this was Boxing Day) to thin it out and cool it down... I did need a couple of stock cubes, garlic and added spicy herbs like pepper, paprika, coriander etc..... added those in initial cooking, before zapping.... well, it made about 10 pints of gorgeous warming soup... a sort of spicy, with a sweet tang to it.. and cooling it the way I did, meant that it could go straight into the freezer....... I have called it *Mexican sweet and sour Turkey and bean soup*.....

Most have my family have had some, so far....dad has some in his freezer, lol.... and I am just sending some up to son's ex, as little granddaughter has loved it!!

We love soup, in this family.... during the winter, I always have a freezer full of various types.

Love

Daff I did exactly the same - boiled carcase and anything else that was lying around - and today zapped it in food processor - came out rather thick but hey ho it was lovely. Got loads left so will probably freeze it.

I like the sound of these two versions of Turkey soup, and have bookmarked the thread. Didn't get Christmas dinner on the big day, so when I get round to it, I'll know what to do with the leftovers. Daff your soups are always so good.

I've made both turkey stock and beef stock over Christmas, freeze it in amounts of 2 cups or so, ready to start some concoctions through the next few months. Love it.
My mother always served us turkey broth with a raw egg dropped into it before serving, always made me gag as a child, my Dad LOVED it, took the egg down whole like an oyster. Another memory . . . I seem to spend a lot of time down memory lane.
