Would it be wise to bake a Victoria Sponge cake for a Birthday cake, I need it about 8 or 10 inch square, will a Victoria sponge be ok as a 8/10 inch because they are usually round and small, or should I bake a Madeira or Genoese? They are all the same to me, all just sponge cakes!!!

Am just making a 9 inch sponge cake for an anniversay at the moment... just come on here for a break!! I find that a victoria is too light, and use a maderia cake recipe. Its a bit firmer than a victoria but just as delicious!!! Clare x

No, there are lots of different ones about, I can pm you the recipe for the maderia if you havent got it!! Its just as easy to do as a victoria!! Clare x

star , if its for a child ,i would stick to the victoria sponge,they seem to like them more,(softer),for an adult the maderia.

Here is ingredients for 10x12 Vic sponge,,,,10oz butter,10oz sugar(castor)5 large eggs, 10oz of Self/R flour,,,follow usual mixing recipe,bake for abt40 /50 mins,,,,,,,or half in 2 tins timing,,,,,,leave till cold before icing,,,,,,,,,,sandwich together,small drops of vanilla ess can be added when mixing,,,

Thanks for the recipes Clare and Kay. It will be sugarpasted too, so maybe a madeira will be best.

Star just to be awkward I use a genoses as the sponge for cakes like that then sugarpaste them, last longer as well. d x
