Why Would A Childs Surname Change In A Census?

I was looking for Hilda M Barrett of yarmouth born 1887 and found her in the 1901 census living with family name Blyth, when I looked into 1891 census she is Hilda M Blyth, her parents names are the same, why would hers change?

Was her this her mother's maiden name, could she possibly have been born before they were married?

I found my grandad and his brother living with and named the same as his maternal grandmother,his parents where married,His mother was dead but his father wasn't.still not sure where he was or their grandfather.!! Could have been listed by the name he was known as,which is what happend with my grandad.

My paternal g'father was born out of wedlock and birth reg'd as Jim HUDSON. In 1881 at age 16 he was Jim BEETand in 1901 was James BEAT. His first son was reg'd as Henry G BEET but later became HARRY G BEAT. Does this give you any ideas? Ron
