Hi Roxanne How about Lemon Curd beautiful. I have a recipe somewhere if I can find it. If not sure there will be one on the net somewhere. Also freeze the juice in ice cube trays they are lovely in drinks and also when you need lemon juice for recipes. Cant think of anything else at the moment Have a good Day Regards Jackie |

I freeze lemon slices in layers with cling film between them. I then add them to drinks while frozen instead of ice cubes. It adds a nice flavour without diluting the drink. Handy to have around before Christmas. I used to make a very nice pud called St. Clement's trifle. I don't think the amounts were critical but it was basically crumbs of trifle sponge mixed in with finely grated orange and lemon rind plus orange and lemon juice and thick double cream. It looks a bit messy but you mix it all together and leave it a few hours. It thickens up a bit. I used to then decorate it with those candy orange and lemon slices you can buy. Um..........must go and look for that recipe again. It was popular if I did it for parties. Sue |
