Beetroot Soup.

Has any one made this i have a recipe from a farm shop wonder what it is like?. June.

We grow beetroots but I've never tried making soup from them. Please let me know what it's like if you try it. Heather

H. I am only doin half as it makes a big pan full you would need a cauldran for the full lt. Heather. Recipe... 6 Beetroot Grated 1 Potato Grated... 8oz Green Cabbage Shredded ...1 Onion Shredded ... half tin Tomatos... 4 Pints Veg Stock... Juice 1 Lemon... Salt and Pepper Method... Brown Onion in oil then add other veg Saute for 5mins or so then pour over enough stock to cover veg and simmer for 30 mins Liquidise if desired or add rest of stock to desired thickness along with the lemon juice ... Season to taste put a blob of sour cream if liked. .... Enjoy.... June.

Mind boggles at grating beetroot, wear a pair of rubber gloves and a wipe clean pinny, and clean the kitchen after!!

Valice it was a right job grating that beetroot the soup tasted good v rich it,s nice to try new things but i think veg soup is my fave June.

I make a veg soup the easy way, buy a pack of frozen casserole mix or stewpack veg, no preparing!!
