On forces-war-records site, those two are Eichorn, not Euchorn.
But I don't have a sub either.

But thinking along those lines -
William, are you sure his name was Euchhorn ?

Just as a long shot -
If his name was Eichorn, he may have stayed in Wales after the war ???

More about those two Eichorns who are on forces-war-records:

R. N. Eichorn
in the UK, Allied Prisoners of War, 1939-1945
Name: R. N. Eichorn
Rank: Cpl.
Military Date: 1939-1945
Service Number: 27572
Source Description: 21: Imperial Prisoners of War Held in Italy, Italian-Occupied Territory: British & Commonwealth Army

R. G. Eichorn
in the UK, Allied Prisoners of War, 1939-1945

Rank: Pte.
Military Date: 1939-1945

So they weren't Germans held in the UK. They were British or Imperial prisoners held in Italy.
