Mayonnaise help please

I made mayonnaise once but found that I preferred the bottled variety! TBH, at a £1 jar for H*llm*n's (on offer) it's cheaper than using your own eggs.

I made meringue for the very first time today and it turned out well, but you do need an electric whisk!

Whisk 3 large egg whites until they are so stiff they won't fall out of the upturned bowl. Add 6 oz of caster sugar, whisking in an ounce at a time until you have a mixture that forms 'peaks'. Spoon onto a baking sheet covered in baking parchment (this won't stick) and bake in a low oven (140 deg) for one hour. Watch the meringue and don't allow it to brown. Turn the oven off and leave in overnight so the meringue dries out completely. Cover with whipped cream and fruit; dust with icing sugar and 'Voila'; call me Delia! (Well, it is her recipe)

I think Muffy has her own birds Birdi lol She's very rustic chic you know.....

I had a lovely meringue today....that sounds lovely Birdi.

The Pavlova is nice but bad for the hips, you know.

I was gutted, absolutely gutted, to find out that the meal I had made up, out of my own head, and which was a family favourite..... was a proper posh meal, lol... I used to use up all the last few bits of veg in the freezer (why do we always leave half a dozen lonely peas in the bag, lol) and the fridge.. along with a couple of eggs, a few potatoes.... and a hard heel of dried up cheese, even, lol... and it was wolfed down as though it was a banquet!!

And that was a frittata. Scrummy... it is my littlies favourite, as well.....she would eat it every meal given half a chance.

I once had proper mayo at a big posh do, Muffy... and it was horrible, not what I was expecting at all....... so I just think proper mayo must be an acquired taste.

Oh... and my merangues never .... I have typed this bit about three times, and it looks rude, so I am not putting it down in it's original form, it has been well edited!...done what they are supposed to do, and have always been a bit soggy... not at all like the ones you buy in the shops :¬(((

Real mayo is yummy- takes ages to make, and the taste does depend on the type of oil you use. matters not which oil I use as it has loads of garlic in it, and all you taste is garlic, but thats the way i like it

Thick shiny yellow-y wobbly homemade mayo is far nicer than Hellmans

So pleased that it turned out well Muffy, I wouldn't want you to have ruined all those lovely fresh eggs because of my suggestion :)
