Hi, Don't eat chips that often but must confess I use lard when I make them. That's how my mum always did them. They are delicious, lovely pale golden colour is how I like them. I just drain them on kitchen roll. I especially love them with a cold meat salad and lashings of salt and salad cream. Aileen xx

Aileen, Being a northerner and from a family that owned fish & chip shops all over the North east, dripping is close to my heart!! Feeling a bit nostalgic now...... Seeing this thread has given me the urge to go out and buy myself a proper chip pan, and say good bye to oven chips. T

I've always used lard, even when I had an electric fryer I used lard, but it broke on me and I've gone back to the old chip pan that used to belong to my Mum. I love cooking them and them putting them in the oven to soften up abit while I cook the rest of the meal. uhmmmmmmmm yummy think I might go and do myself some for my lunch. Helen

Chips and roast potatoes never tasted better than cooked in lard. But of course I have to do the healthy thing, in oven, and as a rare treat. Sunny R

I remember my grandad, when he switched the ranges off on a saturday night, would throw a couple of half crowns into the hot dripping. 'There's your bonus for changing the dripping' he would say and on Monday the staff would clean out the solidifed dripping and ' collect' their bonus. So, who's having PROPER chips tomorrow?
