Put in a large saucepan...carrotts, onion, swede, turnip, celery, red pepper, chicken stock cubes (all chopped small). Start by adding 2 pints water, and top up as required. Bring to boil and then simmer till well cooked (keep lid on saucepan when simmering). When this has been done, blitz it with a hand blender ( careful its hot ). Add salt and pepper to taste, and if too thick, add more chicken stock. Serve as needed throughout the day as a "filler". When serving sprinkle with fresh parsley. And the whole pan of soup is FREE on either Green or Red day. |

I make a quiche similar to Annes........... except I add very low fat cottage cheese to the egg (free!) and mix together. I then make up any of the free pasta and sauce and put that on top of the potato case then add all veggies, etc and egg mix then cook. It sounds really weird but totally works. You can't tell it's got pasta in it. It just gives it a firmer texture. The whole thing is free on green day. Try it! Joanne |
